Pancakes



Pancakes!


Ingredients
  • 50g unsalted butter - cubed
  • 350g S.R. flour
  • 60g caster sugar
  • 2 eggs
  • 500g milk
  • 1 tsp vanilla extract
Method
  • Place chopped butter in TM bowl.  Melt for 2 minutes, termperature 50c, speed 1.
  • Add in the rest of the ingredients, and mix for 30 seconds, speed 5.
  • Scrape down jug, and mix a further 30 seconds, speed 6.
  • Let the batter sit for at least 30 minutes.
  • Add a dot of butter to non stick pan, and cook on low heat.  Wait til mixture bubbles, then turn over.
Makes about 1 litter of batter or 8-9 large pancakes.

Pineapple Tarts

Chinese New Year is around the corner.  Why not make your own pineapple tarts, it's easy with the Thermomix.

Filling Ingredients
  • 1kg fresh pineapple, roughly chopped
  • 300g sugar
  • 1 cinnamon quill
  • 4 cloves
Filling Method
  • Place pineapple into TM bowl and crush for a few seconds on speed 6
  • Drain juice out completely
  • Place all ingredients into TM bowl and cook for 25 minutes at Varoma temperature on speed 1.  Jam should be firm, sticky and slightly brownish in color.  Reserve in sterilized jar until use.

Pastry Ingredients
  • 250g plain flour
  • 1 egg, plus extra for dusting
  • 120-130g unsalter butter
  • pinch salt 
Pastry Method
  • Pre-heat oven to 180C.  
  • Place all ingredients into TM bowl and mix for 30 seconds on speed 7
  • Turn out onto floured baking sheet, push together then roll out.
  • Use a pineapple tart cookie cutter, cut into round and line tin.  Fill with cooled jam, brush with beaten egg and bake until golder brown (approximately 15-20 minutes).
